A. Margaritis is a Professor of Biochemical Engineering, Department of Chemical and Biochemical Engineering, University of Western Ontario, London, Ontario, N6A 5B9,CANADA. He has received a PhD in Biochemical Engineering from the University of California, Berkeley, U.S.A. He is serving as an editorial board member of Crit. Rev. Biotech.; J. Amer. Soc. Brewing Chem.; J.
