Dr. Chen received his BS in Animal Science in l991 from National Taiwan University, MS in Animal Science in 1995 from Colorado State University, PhD in Human Nutrition and Exercise Science in 2001 from the Virginia Tech, and post-doctoral training in 2004 from the Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts University. Dr. Chen is now a Research Scientist in the Antioxidants Research Laboratory. His research interests range from bioavailability, metabolism, and bio-actions of phytochemicals to functional foods in health promotion and disease prevention. He is a member of American Society for Nutrition and American Chemical Society. He has authored 40 original articles, 8 review articles, and 48 conference abstracts. He has been invited to present his research findings in China, France, Malaysia, US, Singapore, and Taiwan. He is serving as an editorial member of 4 journals. He has served as a peer-reviewer for 33 journals, as well as the grant programs.
