Aflatoxins are produced primarily by species of Aspergillus, with A. flavus and A. parasiticus being the most prevalent producers. Exposure to aflatoxins can occur through the consumption of contaminated food and feed, leading to a range of adverse health effects. In humans, aflatoxin exposure is associated with acute toxicity, manifested as hepatotoxicity, leading to liver damage and potentially fatal outcomes. Chronic exposure to low levels of aflatoxins has been linked to an increased risk of liver cancer, as well as immune suppression and growth impairment, particularly in children [1].
