Flavor perception
Reducing sugars, such as glucose, fructoses and maltose, contribute significantly to the sweetness of foods. Their ability to activate taste receptors on the tongue triggers a pleasurable sensation that enhances the overall flavor profile of a dish. Moreover, reducing sugars participate in Maillard browning reactions, imparting desirable caramelized and roasted flavors to baked goods, grilled meats and toasted nuts.
