Milk production in India has doubled and has reached 116.2 million tonnes a year thus making India No.1 in production. This tremendous increase in milk production is made factual due to extensive cross breeding of the low yielding desi / ethnic cows with exotic bulls and large scale introduction of Holstein Friesian cows throughout the country as a breeding strategy. This increase in milk yield comes along with its own with baggage of problems viz, the low Fat and Solids Not Fat (SNF) content in milk. The problem of Low SNF in milk of some animals? especially high yielders is more alarming and these genuine milk samples are regularly failing the minimum legally prescribed SNF levels of 8.5% as prescribed by FSSAI, 2006 standards. This is creating a major distress to the dairy farmers who have cross bred cows. Survey studies conducted at both organized dairy farms and at individual farmers door steps across various locations in Karnataka revealed that around 28% to 50% of the cross bred cows were yielding low SNF milks ranging from (8.00 % to < 8.5%). The yield of milk and prevalence of Low SNF in milk were strongly and positively co-related. Decrease in SNF content of milk was found to increase with the exotic blood levels especially with >50% exotic inheritance. Chemical analysis of milk indicated that it was the proteins which were significantly lower in the Low SNF in milk and lactose was found to be fairly stable among all the samples.
